  Strike water 24 liters, 72*C

Mashing steps:

  60min - 68*C

  20min - 72*C

  Mash-out 10 min - 78*C

Sparge volum 15 liters

Boiling - 90 min

Hop additions:

  60min - 35g Northern Brewer (5,9%)

  15min - 40g Saaz (3,5%)

    0min - 25g Saaz (3,5%)

   15min - Yeast nutrient 1/2 teaspoon

   15min - 1g Protafloc

Note: 3 l water added during boil

Yeast  1pk Fermentis Safale BE-256 + 1pk Mangrove Jack's M29 French Saison

          rehydrated

Pitching temperatur - 17*C

Fermenting:

  1. day - 17*C

  2.  to 7. day - 18*C

  8. to 16. day - 20*C

Carbonation:

  Bottled with 7,5g/liter table suga

  2 weeks carbonation at room temperature

Maturing/Conditioning:

  3 months or more at cellar temperatur (7-10*C)
